Gluten Free Egg Free Banana Oatmeal Quinoa Muffins

I was lucky to be off work again yesterday however, Steve unfortunately was not so I was forced to be super productive. When I woke up it was POURING rain and lightening and thundering so I took my run to the gym. I was there later than usual so it was pretty empty which was nice.

gymAs you saw there was lots of treating that took place in Nashville so I am more than ready to get back to the basics. It is always nice to splurge and have a little fun but I am never left feeling my best after indulgent weekends. I managed to get meal prep done Monday night when we got home, and I went ahead and made one for yesterday even though I was off. Brown Rice, Shrimp, & Broccoli with a little Sweet Chili Thai sauce from TJ’s and some Sriracha to make it extra SWEET & SPICY!

lunchAnd in case you hadn’t noticed I haven’t really been juicing much lately. I got out of the  habitwhile we were showing the house and I couldn’t leave my juicer parts out to dry on the counter because Steve wouldn’t let me! I blame it on him, but don’t worry I am back. My body is craving the nutrients and this combo of Kale, Golden Kiwi (whole), Celery and Ginger was just what the doctor order.

It is especially felt great after my 7 mile run this morning! As my marathon training progress the amount of miles I have to run in the morning are growing, so the bad news is  I have to wake up earlier but the good news is I get to eat more during the day! #win

Speaking of eating more, I spent some time yesterday baking up some yummy muffins for you! Okay they are virtual muffins for you and REAL muffins for me and Steve. I cultivated this recipe from several I have been seeing online as well as a few modifications to make them Gluten Free and Egg Free! I had a lot of fun with these and they TASTE so good! #steveapproved  I think crumbling them up and eating with some almond milk or greek yogurt would make it a more hefty snack!

Gluten Free/Egg Free Banana Oatmeal Quinoa Muffins
Yields 12: 117 Calories per Muffin 
Ingredients:
1/2 Cup unsweetened apple sauce
3 mashed bananas
1 sliced banana for topping
1 Cup cooked Quinoa (about 1/2 cup dry)
2 1/2 Cups Gluten Free Old Fashion Oats
1/2 Cup unsweetened Almond Milk
4 Tbs Organic Honey
1 tsp vanilla extract
1 tsp cinnamon 
Instructions:
1. Preheat Oven to 375 and grease a 12 count muffin tin.
2. Prepare Quinoa per package
3. combine mashed banana, applesauce, almond milk, honey, and vanilla extract
4. In a separate bowl combine dry ingredients: oats, quinoa, and cinnamon
5. combine wet and dry ingredients stirring well
6. Fill each cup with mixture,  and top with banana slices. 
7. Bake for 20-25 minutes 
8. Let cool and enjoy warm or store in fridge to snack daily

I enjoyed one today at work and it was perfect to take on the go!
